May 4, 2022 - Wednesday - We took a short trip today to see the Panorama Point overlook here in Redlands. It has been restored to its 1936 original condition and the view is stunning. The overlook offers a 360° view from its 2,187 foot elevation.
This is looking northwest to the Cajon Pass.
This is the Seven Oaks Dam.
This is the Loma Linda University Medical Center.
We could see the airplanes at the San Bernardino Airport.
There are California poppies growing on the hillside.
It's a beautiful spot here in Redlands.
After Panorama Point we had lunch at a restaurant in nearby Highland, CA, the Bear Springs Bistro. The last time we were here was nearly three years ago.
For an appetizer we split their "Loaded Yucca Chips" with crispy fried yucca chips topped with house made blue cheese dressing, pickled shallots, chopped bacon, blue cheese crumbles, fresh cracked pepper and micro basil. It tasted as good as it looks.
For entrées, we both had their "Stuffed Chicken Thighs," which are chicken thighs stuffed with fresh mozzarella and asparagus, wrapped in proscuitto and pan seared. It's served with spinach mashed potatoes, garlic herb cream sauce and crispy chicken skins. It's to die for.
